Disclosure: I was sent items to make the following recipe from Platefull Co-Op. However, all opinions stated are 100% my own.
I think I'm one of the few people who have never made a Chex mix in their life. I highly enjoy them at parties & my sister makes one regularly at the house but I just always reached for the pre-made mix. I thought that maybe it was difficult to make but when I was given the opportunity to make the Tropical Island Chex® Party Mix & was told that it would only take about 15 minutes of my time to make, of course I was game to try it out & I have to say, I think I did a pretty amazing job for it being my first time making it. ;P
Thanks to Publix, I was sent all the goodies to make the Tropical Island Chex® Party Mix plus the recipe to make it below & once it arrived, my son & I quickly got started on making it!
Tropical Island Chex® Mix
Prep Time:15 min
Start to Finish:15 min
Makes:20 servings (1/2 cup each)
8 cups Rice Chex® cereal
1 cup shredded coconut, if desired
1 cup dried banana chips
1 package (7 oz) dried tropical fruit mix
1 jar (3 oz) macadamia nuts
3 tablespoons butter or margarine
1/4 cup packed brown sugar
1/4 cup frozen (thawed) pineapple or orange juice concentrate
- In large microwavable bowl, mix cereal, coconut, banana chips, tropical fruit mix and nuts.
- In microwavable measuring cup, microwave butter uncovered on High about 30 seconds or until melted. Stir in brown sugar and pineapple juice concentrate. Microwave uncovered on High about 30 seconds or until hot; stir. Pour over cereal mixture, stirring until evenly coated. Microwave uncovered on High 6 to 8 minutes, stirring every 2 minutes, until mixture just begins to brown.
- Spread on waxed paper or foil to cool. Store in airtight container.
Oven Directions: Heat oven to 300°F. In ungreased large roasting pan, mix cereal, coconut, banana chips, tropical fruit mix and nuts. In 1-quart saucepan, heat butter, brown sugar and pineapple juice concentrate over medium heat until hot. Pour over cereal mixture, stirring until evenly coated. Bake uncovered 30 minutes, stirring after 15 minutes. Spread on waxed paper or foil to cool, about 15 minutes. Store in airtight container.

It was so easy that my 5 year old was happy & willing to help me – just mix all the ingredients together & I put it in the oven & it was ready within minutes.
This has to be one of the easiest & tastiest things to make during this holiday season. I made it & within minutes, everyone in the house grabbed a small bowl full & it was almost gone by the time I got to it! Almost everyone loves Chex Mix & it's so easy & fast to make, making it the perfect snack for any holiday party!
