I know kids can be picky when it comes to eating vegetables. Hey, I'm an adult & I'm picky with what vegetables I eat! Don't worry, I am getting better though. 😛 My son sees that his Dad loves vegetables (& that Mommy is trying) so he's actually been doing really good with eating his veggies.
As part of the “iCarly iCook with Birds Eye” event, kids shared thousands of fun recipes showcasing their love of veggies. It looked like fun & since my son is my little helper in the kitchen, we checked out the Birds Eye website to see if we could do one of the fun recipes featured on their website. I let my son choose and while I thought he was leaning towards making Yakimaniac Veggie Martians, he actually picked the Veggie smoothie. I don't blame him – it looked delicious & we make fruit smoothies quite a bit and they're his favorite. This was such an easy recipe that I knew my son would be able to handle it.
The Birds Eye Steamfresh veggies were ready in a couple of minutes and when they cooled a bit, I helped my son put them in the blender but for the rest of the ingredients, I just set them out for him and he put everything into the blender (I made sure it was unplugged) and when it was time to blend, he helped me press the buttons. He couldn't wait to try it (& neither could my husband)!
The smoothie's taste surprised me more than anything – I couldn't tell it was a veggie smoothie AT ALL and I have to be honest, I thought it was going to be not as tasty as a fruit smoothie but I was wrong. I loved it and so did my son and husband. Adrian actually replaced his usual fruit juice at dinner with 2 servings of this smoothie!
Have a little lover of smoothies in your home but can't get him to eat veggies? This would be a perfect way to get him to get his servings of veggies in! I encourage you all to try out one of these fun recipes with your kids – my son had so much fun and was wanting to make more the next day! We are trying the Grilled Cheesy Broccoli Pocket with Ham this weekend! 🙂

- 1 bag (12 oz.) Steamfresh® Broccoli, Cauliflower & Carrots, cooked according to package directions, cooled
- 1/2 cup low fat vanilla yogurt
- 1/2 cup orange juice
- 1 large ripe banana
- 3 Tablespoons honey or brown sugar
- 1-1/2 cups ice cubes
1. In blender, combine all ingredients and process until smooth. Serve immediately.
